FOEDER AGED WILD ALE WITH APRICOT As years passed and our oak aged beer became more robust, we discovered many unique, interesting, single barrels deserving of a special release. Barn Owl was created as a response to these lone wolves, and has grown into a diverse, ongoing series that reflects the growing diversity of our barrel program. The name is a nod to the wise and exacting animal that keeps watch over the farmhouse (er..industrial warehouse), and the one-off creations are released sporadically throughout the year, just as soon as we deem the barrels ripe for the picking. 6.1% ALC./VOL. | 500mL bottles | Bottle Conditioned

PILSNER Bellweiser is our take on an ‘old world’ pilsner, showcasing a pale malt body, firm bitter backbone, and noble-esque hops. The dry-hop on this one is almost non-existent to make room for lots of yeast-derived aromatics, and the resulting beer crosses off all the 'crisp', 'clean', and "refreshing" boxes you need it to. 4.8% ALC./VOL. | 473mL can What it smells and tastes like: Brewed with a neutral yeast, allowing the subtle interplay of hops and malt to shine through. Light floral aromatics, soft bitterness in the finish, easy to drink.

FOEDER AGED PALE ALE Brettal Head is a unique, intensely fruity style of foeder aged pale ale. Fully fermented and massively dry-hopped beer undergoes refermentation in oak, creating new layers of complex brett character, light acidity, lasting hop aromatics, and expressive fruit flavour. 6.4% Alc./Vol. | 500mL bottle | Bottle conditioned What it smells and tastes like: A hugely fruity style that balances acidity with notes of mango, apricot, and pineapple. Subtly earthy and spritely.

BARREL AGED DARK SOUR One of the first aged sours to leave oak at Bellwoods, Donkey Venom is a complex beer that we've brewed and blended many times over the years -- constantly subject to our relentless process of refinement. At its roots it's a rich, dark ale, but the time it spends in barrels with brett and bacteria harmonizes the ingredients, yielding bright levels of acidity and complimentary fruit flavours. A hybrid style of sorts, that defies simple categorization. 8.5% ALC./VOL. | 500mL bottles | Bottle Conditioned What it smells and tastes like: A foundation of roasted malts lends aromas of chocolate, mocha, and charred wood, while the flavours are firmly rooted in tart berries, black forest cake, and subtle caramel. High, refined carbonation within a dry body.

The blending process allows us to maintain a common thread across batches, the aging adds nuanced layers, while the brett and bacteria work hard to create small idiosyncrasies in each release. It's a refined, effervescent, and delicious beer worthy of special occasions and idle weeknights. ABV: 6.3% | 500mL bottle | bottle conditioned What it smells and tastes like: What it smells like, what it tastes like: Distinct aromas of oak, green apple and gewurztraminer grape play wonderfully into flavours of pear, tropical fruit, white grape and vanilla. A light airy body and well integrated acidity match the rich oak character, making for an ale that toes the line between complexity and drinkability.

The blending process allows us to maintain a common thread across batches, the aging adds nuanced layers, while the brett and bacteria work hard to create small idiosyncrasies in each release. It's a refined, effervescent, and delicious beer worthy of special occasions and idle weeknights. And every so often we decide to age a batch with Montmorency cherries because sometimes the cliche "with a cherry on top" is both figurative and literal. Not to mention, delicious. 6.1% ALC/VOL. | 500mL bottles | Bottle Conditioned What it smells and tastes like: Lots of balanced acidity, distinct cherry aromatics and flavours, and lively carbonation. Subtle notes of brett, spice, hard candy, and stonefruit.

WILD ALE BLEND W/ NIAGARA PRUNE PLUMS Grandma’s Boy is a wild ale blend made in the Bellwoods Solera-style. Repeatedly, foeder aged beer is blended with a small percentage of fresh beer to create a spritzy beer with layers of firm acidity, refined brett character, stone fruit flavour, and soft minerality. This variant is conditioned on fresh Prune Plums from Niagara. 7.7% ALC./VOL. | 500mL bottle conditioned

Rather than choosing between sour or hoppy, we decided to create a beer that would be both at the same time. Showcasing the aromatic benefits of a generous dry hop (Citra, Amarillo, and Cascade), harnessing the pleasing acidity of lactic acid producing bacteria (we use a house blend), and coming to a bottle near you without a pesky 2 year slumber in oak, Jelly King is the fermented embodiment of having your cake and eating it too. 5.6% ALC./VOL. | 500mL bottle What it smells like, what it tastes like, what it looks like: An everyday, juicy, drinkable sour with punchy hop aromatics and fruity foundational flavours. Low bitterness, light body, and pale yellow in colour, with notes of fuzzy peach, tangerine, and cedar.

PALE ALE Jutsu was created to embody all the elements of hoppy beer we love, in a most approachable format. It’s super aromatic, but low in bitterness, incredibly hazy, but light bodied, and strikes the perfect balance between juicy and dry. This pale ale is easy to drink, and easy to call a favourite. 5.6% ALC./VOL. | 473mL can What it smells and tastes like: Hazy with restrained bitterness, juicy yeast-derived aromatics, and a dry body. A refreshing and super drinkable hoppy beer with notes of cantaloupe, and nectarine.

IPA Roman Candle is the first IPA we ever brewed, back when we first got reliable access to Citra and decided to base a beer around it. Dry-hopped at the rate of our Double IPAs, perfectly balanced, and showcasing bright citrusy aromatics, “Rocan” has earned a place among our favourites. 6.8% ALC./VOL. | 473mL can What it smells and tastes like: It’s a lightly resinous, balanced IPA that showcases lots of juicy melon and orange peel.

BLEND OF BARREL AGED WILD ALES w/ ONTARIO CHARDONNAY & SHIRO PLUMS Vines is a series that celebrates wild beer and wine grapes. No. 6 is a blend of barrel aged wild ales refermented with Ontario Chardonnay grapes and Shiro plums -- and it's our last Vines release using the 2019 harvest. 9.3% ALC/VOL. | 500mL bottles | Bottle Conditioned

BLENDED FOEDER SAISON A symbol synonymous with Bellwoods Brewery; our White Picket Fence has undergone a complete overhaul and its re-envisioned form much better reflects the direction of our brewery. This foeder fermented saison is the result of a unique blending regimen, before being gently dry-hopped and bottle conditioned. Labour intensive in process, but rewarding in result. 6.0% ALC./VOL. | 500mL bottles | Bottle Conditioned What it smells and tastes like: A complex, layered beer with perfect champagne-like carbonation to carry the lemon meringue aromatics, bright hop character, and rich brett notes. Refined and balanced acidity with lots of complimentary citrus.

Barrel Aged Wild Ale

Barrel Aged Double Dry-Hopped Wild Ale

BLEND OF 2 YEAR BARREL FERMENTED SPONTANEOUS COOLSHIP BEER

Barrel Aged Wild Ale w/ Wine Grapes 9.2%, 1.5L Vines is a series of barrel aged wild ales inspired by natural wines. Each batch is blended based on the grape varietal at hand, and fermented based on the state those grapes are in (whole cluster, de-stemmed, lightly pressed skins, etc.). The result is a unique collection of beers that incorporate wine grapes in all forms, and showcase process as much as ingredients. No. 1 is an ode to Gamay, wild yeast, and oak. In it, we refermented some of our barrel aged beer with Rosewood Gamay skins that had been lightly pressed in the making of their Rosé.

Barrel Aged Wild Ale Refermented with Riesling, Chardonnay, Gamay & Shiro Plums 9.2%, 1.5L Vines is a series that celebrates barrel aged wild beer and wine grapes. No. 4 is a blend of barrel aged beers, each of which underwent a refermentation and conditioning on fruit skins. A riesling wild ale, chardonnay wild ale, gamay wild ale, and Shiro plum wild ale were blended together to create a final hybrid style evocative of orange wine.

Oude Geuze 6.5%, 375 mL This is a unique blend of one year old lambic matured on foeders from Tuscany, Italy that were used for thirty years to mature the famous Brunello di Montalcino wine and a three year old Lambic that matured on an old Oud Beersel foeder.

Dark Farmhouse Ale, 6% Blacklight is a European-hopped dark farmhouse ale brewed with oats and midnight wheat.

Barrel Aged Strong Sour Ale 11%, magnum (1.5L) The Abbey of Saint Bon-Chien: winey, tart and complex, matured - slowly - in oak barrels. The beer that forged the legend of the BFM across the Atlantic.

Wild Ale 7%, 750mL Beer of mixed fermentation, the Stout Rullquin is obtained from a blending of 7/8 of Rulles Brune (Stout de Gaume) and 1/8 of a blend of 1 year old lambics, which has matured for 8 months on oak barrels. Unfiltered and unpasteurized, this beer is refermented for 6 months in the bottle.

Aged for 12 months in neutral french barrique. Naturally fermented, unfined, unfiltered.

Fleur is a blend of Seyval Blanc, Vidal, Sauvignon Blanc and Chardonnay. Élevage on Maréchal Foch lees.

Fountain is a spontaneously fermented cider with blueberries and organic lemon basil.
