A deliciously quaffable blend of American grown and malted Pilsner, Munich, and Vienna malts, delicately hopped with imported German Hallertau Mittelfru, and fermented cool and under pressure in our horizontal tanks with German Lager yeast. Our take on this incredibly delicate Kölsch style ale starts with a base of American Pilsner malt with small but equal portions of chit malt, white wheat, and an under modified Pilsner malt which provides a light color & body while producing immaculate foam. Moderately hopped throughout the boil with very fresh German varietal Hüll Melon, and fermented cool with a yeast strain straight out of Köln, Germany. Gradual cold conditioning in our horizontal tank will result in improved clarity and crispness, this classic style is built for copious drinking outside in the Alabama summer! Tapped/canned 6/26/23

This year we brought in some hyper-local white corn malted by Old South Malthouse in Cullman, AL. Cheers to 20 Years of Havoc Hockey in the Hockey Capital of the South! This golden hued Double IPA is saturated with hop aroma and flavors! A blend of Strata and El Dorado in the kettle, and low temp whirpool with Strata, Meridian CGX, and NZ Riwaka CGX. Fermented with Thiolized yeast, this DIPA got an early fermentation addition of liquid Mosaic Spectrum and NZ Nelson Sauvin Hopkief and then dry hopped with a heavy dose of Strata. Restrained bitterness, some sticky honey/resin notes, and a finish of sweet passionfruit. Tapped/Canned 10/26/23

Belgian style Tripel aged 9 months in house in French Oak Chardonnay barrels. The residual sweetness from the Belgian malts balance well against the barrel tannins. Fresh white grapes, pear, and melon all harmonize with a noticeable malty sweetness on the back of the palate, finishing very fresh and relatively dry.
