Jasmine Tea Lager is a lager that uses Jasmine Tea produced in Guangxi province. Each tea leaf is roasted with fresh Jasmine flowers at least six times in order to get the optimum amount of aroma, while adding fresh jasmine flowers to each roasting cycle. The tea is then brewed at a medium temperature for hours to extract the tea flavor but with minimal tannin extract, which adds to the final beer’s richness. This unique saison is brewed with Koji-kin (Aspergillus oryzae) which is a vital ingredient to create sake, and fermented by a combination of sake yeast and Belgian saison yeast. Koji is first liquefied in a separate cooker for starch conversion to create glucose and citric acid, then transferred into the malt mashing tank. Sake yeast is used in the primary fermentation mainly work for glucose, and the Belgian yeast to complete the secondary fermentation. Fragrant yuzu juice is added at the very end of the fermentation to keep the fresh flavor. This beer has a distinctive sweet flavour of rice koji and a natural acidity caused by the fermentation with an aromatic kick of Yuzu citrus. Den Blanc is a new expression of sake made using white koji to create a pleasant citrus-like sourness together with gentle umami flavors. White koji is commonly used for shochu making and naturally produces a higher amount of citric acid. Due to this natural high acid production, the shubo (yeast starter) is made without adding any lactic acid. Just like our original flagship Den, we use Calhikari rice grown by Rue & Forsman Ranch.

From Japan's most prestigious brewery, Hitachino Nest White Ale is a refreshing, mildly hopped witbier brewed with coriander, nutmeg, orange peel, and fresh orange juice. I ts citrusy, sweet-fruity-tart (natural acidity of the fresh orange juice) flavor profile makes it a unique Japanese interpretation of the Belgian Witbeer style. Perle & Styrian Golding hops are used.

Nanjing black is a small lager beer version of Master Gao’s award winning Lunar Eclipse imperial stout. Like pop corns to Americans, puffed rice is a traditional snack to Chinese. Before they started to vanish about twenty years ago, puffed rice vendors had taken every neighborhood’s street corners. They put rice into a high pressure cooker, and rotated the cooker over a charcoal stove. When inside temperature and pressure reached their targets, they released the cookers’ valve with an iron level wrench. With a big ‘bang!’, all the rice will burst out of the cooker and get puffed instantly when they hit the cold air. It’s amazing for children to watch a cup of 3oz rice turned into a big load of happiness. When it comes to brewing , the whole grain puffed rice provides a cleaner and crispier body than gelatinized rice starch, and significantly more concentrated rice flavors. As a result Master Gao’s Puffed Rice Chinese Pale Ale has notes of sake & malt balanced with tropical hops and a very dry finish. A most remarkable combination of sake, saison and champagne. Anbai literally means “Salty Plum” and the word is also used to describe the stat of taste and flavor. Ii Anbai means “just right”! Hitachino Nest Anbai Ale is brewed based on the high alcohol version (7%) of the siganture beer Hitachino Nest White Ale, infused with locally grown green sour plum (ume), and finished up with a pinch of Japanese sea salt (moshio). The balance of sourness, bitterness, comes from the plum and subtle saltiness, great umami taste of the sea salt is “Ii Anbai - just right!” Hitachino Nest Anbai (Plum Wheat Ale w/salt) Alc./Vol.: 7.0

There is an art behind creating something special, which our Dokkaebis have mastered, to brew a full-flavored, double dry-hopped DIPA. And you'll be pleasantly surprised by the super-smooth taste. Through carefully selected hops that add a burst of fruitiness, this new wave DIPA has just enough flaked grains to level out the mouthfeel, but not so much that you don't know you're drinking a double.

Currently we are selling Batch #15 Our original flagship ‘Den’ is brewed using a single origin rice varietal called Calhikari which is grown by Rue & Forsman Ranch (www.rueandforsmanranch.com) in the Sacramento Valley. Our goal was to make a sake with higher acidity which would pair beautifully with California cuisine. The higher acidity is created by tweaking the temperature of the mash during the fermentation process. Low temperature fermentation results in a sake with a subtle, elegant, fruity aroma. Each batch is slightly different. However, the core characteristics are always similar since we use the same ingredients (yeast, koji, rice and water) with every batch.

Rosé Awashizuku - Kiuchi Awashizuku Sake infused with strained and pasteurized Connecticut Raspberries is a collaboration between Kiuchi Shuzou Ltd, Japan and O.E.C. Brewing, Oxford, CT 06478. KIUCHI AWASHIZUKU is a slightly effervescent sake, relatively low alcohol and a touch of sour taste imparted by the refreshing acidity of white koji. The amazing combination of sweetness and acidity blends perfectly well with the natural flavors of our local raspberries. 11.4% alc./vol.

We blended two picks of SB to make Disco!. Each pick was divided into two; carbonic maceration and a reverse saignée. The carbonic was uncrushed whole clusters that went into a sealed up tank for 2 weeks - then pressed and aged in neutral barrels. Vineyard: Planted in the 1970s, organically-farmed Hillside Vineyard in Talmage sits right above the City of Ten Thousand Buddhas. CCOF certified, the vines are head-trained and planted on loam. Managed and farmed by Humberto Nunez, Hillside has become a cornerstone for Subject to Change.

A Grenache – based Rosé blend, crafted using the traditional Provençal method. Aromas are minerally and ethereal with hints of grapefruit, white peach and spicy floral notes. Vibrant acidity and deliciously great length.

Using hand selected malts by our Dokkaebi, we bring you a light-body, medium flavor profile lager with a dry finish. Its malt composition is characterized as smooth, toasty, and even bready. And we've added some hops to give a hint of citrus and earthy undertones. ABV: 5.30%

2021 // Monterey Banyan was created in 2002 with the idea to make wines that would pair with Southeast Asian cuisine, particularly the Thai food that Kenny had grown up eating. At one point, there was Gewürztraminer, Riesling, and Viognier, but over time, the line has been trimmed to just what has always been it's most popular wine, the Banyan Monterey County Gewürztraminer.

We dedicate this beer to the grapefruit, our Asian Forbidden Fruit. God once said: “of every tree of the garden thou mayest freely eat.
