      This is not your average Manchego. This is a Manchego named for the year Miguel Cervantes wrote Don Quixote, which was the first written reference to the cheese. A Manchego made from the milk of animals born to the gentle sounds of mariachi music. The tunes allegedly keep the lambs happy and calm, which leads to tastier milk. Like most Manchegos, 1605 will be earthy and savory, with toothsome texture. But there will also be heavenly notes of nutmeg and caramel, candied almonds and a hint of hay with a long, lingering finish. Do we owe it to the mariachi? We’re going to say yes.       Montgomery’s is a benchmark English farmstead cheddar, an ultra-traditional version of a style of cheese that’s ubiquitous enough that it can seem un-special. But there’s a reason cheddar hit the big time, and going back to the source code with Montgomery’s (Monty’s if you’re a true cheese nerd) can help you understand. Third-generation cheesemaker Jamie Montgomery uses the same starter cultures as his mother before him and his grandfather before her. The cultures are difficult to handle and can be unpredictable in their results, but they’re credited with producing an incredible symphony of flavors: rich, meaty and robust with sweet, nearly caramelized fruit notes.
