Five main components make up a Neapolitan pizza: 1) The crust is hand tossed, thin and comprised of only "00" flour, salt, water and yeast. 2) The sauce is crushed San Marzano tomatoes. 3) The cheese is fresh "fior di latte" mozzarella. 4) Each pizza gets a drizzle of extra virgin olive oil to enhance the flavor. 5) Pizzas are cooked in wood-fired hearth ovens that reach temperatures in excess of 1,000 degrees. That means they cook fast, like 90 seconds fast.
